Sucralose food and beverage applications

Dec 17, 2025

Sucralose, with its high sweetness, zero calories and strong stability, is widely used in various food and beverages. The specific application scenarios are as follows:

Beverages

Carbonated drinks and fruit juices: It is a common sweetener in sugar-free or low-sugar carbonated drinks. It remains stable in acidic environments, maintaining a refreshing sweetness without reacting with the gas in carbonated drinks or affecting the color and transparency of the beverage. In fruit juice drinks, adding an appropriate amount of sucralose can make up for the insufficient sweetness of some acidic fruits, highlighting the natural flavor of the juice while avoiding the problem of excessive calories caused by adding a large amount of sucrose.

Tea and alcoholic beverages: For green tea, black tea and other tea beverages, sucralose can meet consumers' demand for low-sugar drinks without masking the unique rich flavor of the tea. When added to alcoholic beverages such as white spirits and beer, it can effectively mask the astringency and bitterness in the alcohol, making the taste of the beverage more harmonious and mellow.

Functional beverages and sports drinks: These beverages usually contain functional components such as vitamins and electrolytes, which may have a bitter or astringent taste. Sucralose can mask such unpleasant tastes. At the same time, its zero-calorie feature aligns with the health positioning of these beverages, making it suitable for people who need to replenish energy and electrolytes during exercise.

Dairy products

Yogurt and fermented milk: During the fermentation process of yogurt, a certain amount of sourness is produced. Sucralose remains stable during the fermentation process and is not decomposed by lactic acid bacteria, nor does it affect the fermentation process. After addition, it can neutralize the sourness and improve the taste, and is also suitable for diabetic patients.

Ice cream and milk-based beverages: The production of ice cream involves low-temperature processing and freezing storage. Sucralose can maintain a stable sweetness during this process. In milk-based beverages such as soy milk and milk tea, it can increase sweetness without adding calories and will not affect the rich taste of dairy products.

Baked goods

Due to its excellent heat resistance, sucralose does not lose or reduce its sweetness during high-temperature baking. Therefore, it is widely used in pastries such as mooncakes, cakes, and bread, as well as baked snacks such as cookies. It can reduce the calorie content of the product while maintaining sweetness and does not participate in fermentation reactions, which does not affect the growth and reproduction of yeast and thus does not negatively impact the fluffy texture of baked goods.

Candies and preserved fruits

Sugar-free candies: It is often used in sugar-free chewing gum, mint candies, gummy candies, etc. For example, in sugar-free chewing gum, its fine particles can be evenly distributed, ensuring a stable sweetness with each chew and reducing the occurrence of tooth decay.

Preserved fruits: When making preserved fruits such as hawthorn and preserved plums, adding sucralose can ensure the sweetness of the preserved fruits. It has good permeability and can make the sweetness penetrate the interior of the raw materials without reacting with them, which helps extend the shelf life of the preserved fruits. The addition amount is generally controlled at 0.15 grams per kilogram.
